Spicy snacks

People like to eat some snacks to kill time when they are free, but they cannot feel safe eating the ones bought outside because they are afraid that they are unhygienic and unhealthy. It is a very relaxing thing to eat spicy snacks made by yourself and drink cool beer in the hot summer. Here are some methods for making spicy snacks. 1. Secret spicy dried tofu

Ingredients: 500g dried white tofu, 10 bright red chili peppers, 8g chili powder, 2g Sichuan peppercorns or Dahongpao peppercorns, 60g ginger, 9 cloves of garlic, 40g June fresh soy sauce, 2g pepper powder, some cooked sesame seeds, a pinch of salt, 6g cumin powder

2. Cooking steps:

1. Prepare one pound of white tofu

2. Boil water and cook white tofu (use a larger pot to prevent overflow)

3. Cook until small honeycomb-like holes appear and remove from the water

4. Cut into strips or squares

5. Deep fry until golden brown.

6. Prepare the seasoning as follows (I used a few dried chilies because I didn’t have enough fresh red pepper)

8. Deep-fry the peppercorns

9. Add chopped chili pepper, ginger and garlic, stir-fry until fragrant, then add pepper powder and cumin powder and stir-fry until fragrant

10. Stir-fry over low heat until fragrant

11. Add dried tofu and stir fry evenly

12. Add soy sauce and a little salt, stir fry for a while, turn off the heat, add cooked sesame seeds and serve.

2. Spicy Beef Jerky

[Ingredients]: 2 spoons of cooking wine, some soy sauce, 3 slices of ginger, 1 portion of star anise, 3 spoons of chili powder, 1 spoon of pepper powder, some cooked sesame seeds, some sugar, some salt, 2 tablespoons of pepper oil, some chili peppers

【Method】: 1. Cut the beef into pieces and clean them;

2. Put it in a pot, add water and boil for 1 minute, skim off the blood foam and wash it clean;

3. Fill a pot with water again, add the ingredients (cooking wine, soy sauce, salt, ginger, spices), bring to a boil over high heat, add the beef and simmer over low heat for about 40 minutes;

4. Take out the braised beef, let it cool, and cut it into long strips

5. Pour oil into the pan and heat it up. Add the beef and turn to low heat. Fry for 5 to 7 minutes until the beef turns black and has almost no moisture.

6. Pour out some of the oil, leave some, pour in cooked sesame seeds, chili powder, pepper powder and chili, stir-fry over medium-low heat until fragrant;

7. Pour the fried beef strips in and stir-fry over low heat to coat the beef evenly with sesame and chili oil. Add appropriate amount of sugar, salt and soy sauce to taste.

3. Spicy lotus root slices

1. Ingredients

Ingredients: 5 lotus roots

Accessories: oil, salt, bay leaves, 5g fennel, 5g cloves, 10g green pepper, cinnamon, star anise, 20g sugar, 5g chili powder, soy sauce, soy sauce

2. Steps:

1). Prepare the necessary materials.

2). Cut the lotus root into 5 mm thick slices and rinse them in clean water.

3). Add oil to the pan, heat it up, then pour in bay leaves, fennel, cloves, green peppercorns, cinnamon, star anise and stir-fry evenly.

4). Pour in the lotus root slices and stir-fry evenly.

5). Add light soy sauce, soy sauce, sugar and chili powder and stir-fry evenly.

6). Add water almost level with the lotus root.

7). After boiling, turn to low heat and cook for about 30 minutes.

8). Collect the juice and sprinkle a small amount of white sesame seeds.

  1. Shaanxi Spicy Sauce

    Many places have their own special cuisine. Shaanxi not only has mutton soup with steamed buns, roujiamo, pot cakes and other delicacies, but also hemp food. The so-called Ma Shi is a kind of pasta originated in Shaanxi. It is shaped like a finger-sized lump of dough and is often called cat ears.     1. Shanxi Ma Shi

    1. Main ingredients: flour, 1 tomato, 1 potato, rapeseed oil, fungus, tofu, carrots, shiitake mushrooms, green onions, a few beans, zucchini, bean sprouts, spinach, vermicelli, salt, vinegar, light soy sauce, pepper powder, thirteen spices, and chili oil.

    2. Steps to make Shaanxi Ma Shi

    1). Wash all kinds of vegetables.

    2). Dice everything

    3). Saute shallots

    4.) Add the vegetables in order of how easy they are to cook. For example, if beans and mushrooms take a long time to cook, add them first, and tofu last. Add salt, pepper powder, and thirteen spices and stir well. Turn off the heat after cooking.

    5). Knead the dough, cut into cubes, and sprinkle with flour to prevent sticking.

    6). Rub the hemp on the dough. Children, the elderly and those with weak stomachs should rub it thinner. People with strong stomachs please ignore this.

    7). Add the hemp into the pot after the water boils.

    8). After the water is boiled for three times, pour in the fried vegetables. If the vermicelli is cooked, add vinegar, soy sauce, chili oil, and a little sesame oil. You can adjust it according to your own preferences.

    2. Shanxi Ma Shi

    1. Ingredients: flour, seasonal vegetables, tomatoes, soybeans

    2. Process:

    1) Knead the dough, which should be slightly soft, and let it rest for 20 minutes;

    2) Roll the dough into a 1cm thick pancake, then cut into 1cm wide noodles. Roll the cut noodles into cylinders on the chopping board with your hands.

    3) Cut the cylinder into small dices evenly.

    4) Sprinkle flour on the chopping board, press the dough lightly with your thumb, and rub it gently with the pressure. The dough will curl up and look like a cat's ear. A chopping board with a slightly rough surface is easier to rub into shape.

    5) Cook the cat ears.

    6) Cut various vegetables into pistachio-sized pieces and stir-fry until cooked;

    7) Chop tomatoes into small pieces, stir-fry in a pan into a sauce, add enough water, and after the water boils, add vegetables and seasonings.

    8) Pour the cooked hemp, soybeans and fried side dishes into the soup, stir with a large spoon, pour into a bowl and add a few drops of chili oil.
