1. After cleaning the green onions, marinate them slightly with coarse salt.

2. Mix together mashed garlic, mashed ginger, chili powder, shrimp sauce, fish sauce, fine salt, sugar and glutinous rice paste. (Note ingredient number 3) This seasoning is best prepared one day in advance so that after a day of fermentation, it not only has a good color but also tastes great. Drain the slightly pickled onions.

3. When mixing seasonings with the green onions, be sure to do it gently and don't use excessive force, so that the green onions will remain intact. The best way to do this is to lightly beat the shallots into the dressing.

4. Mix the seasonings evenly in groups of 2-3 green onions, fold them, and then tie them into a bundle (as shown in the picture, this makes it easier to pick up and also looks better), and then put them into a sealed container. You can eat it on the second day.

5. Use the remaining seasonings to marinate many vegetables (such as leeks, chrysanthemums, etc.) in the same way.
