How to make Shaoxing drunken chicken

2.1 Use cotton thread to tie the chicken so that the gravy inside can be well preserved.

3.2 Turn the marinated chicken thighs over with the skin outside. Place the chicken thigh cutlets on the foil and roll them up so they stay in shape once the chicken is cooked.

4.1 Prepare a basin of ice water and put the stewed chicken rolls into the ice water. This is to allow the internal moisture to dissipate with the water vapor, making the meat more tender. Keep adding ice cubes halfway through. Leave to cool completely.

5.2 Bring a pot of water to a boil, make sure the water is high enough to cover the chicken rolls. After the water boils, add the chicken rolls, keep the water temperature just above boiling, and simmer over low heat for about 20 minutes. Then turn off the heat and simmer for another 5 minutes so that the meat will be more tender.

6. While waiting for the chicken rolls to cool, you can prepare the marinade sauce. The most basic sauces are stock and wine. The broth I used is a 14.5 ounce can of purchased chicken broth, but you can also make your own. The ratio of broth and wine is about 1:1. Pour a can of broth into the prepared pot, then add 1 teaspoon of salt and 1/2 teaspoon of sugar. At this time, you can also add wolfberry, astragalus, ginseng, angelica, etc. according to your preference. Bring to a boil and let cool. Fill a jar used for broth with an equal volume of Shaoxing wine, pour the broth and wine together and set aside. After the chicken rolls have cooled, untie them. Be careful when untying the chicken so as not to tear the skin. Then put it in the sauce as mentioned above, making sure the sauce covers the chicken.

7. Cover and put it in the refrigerator for one day before slicing and placing on a plate. Pour some sauce, sesame oil and chopped green onions on it and start eating! !
