How to make Sichuan style beef brisket stewed with potatoes

1.1 Cut the beef brisket into pieces and soak them in clean water for 1 hour, changing the water several times during the process. Filter out the blood from the beef brisket and drain.

2.2 Peel the potatoes, wash and cut into pieces. Set aside the auxiliary ingredients.

3.1 Heat oil in a pan and sauté ginger slices and garlic cloves until fragrant, then add peppercorns and Pixian bean paste and stir-fry until red oil comes out.

4.2 Add bay leaves to a boiling water pot, blanch the beef brisket (cook for 5 minutes), pick it up, rinse it, drain it, and remove the bay leaves.

5. Pour in the beef brisket and mix with the Pixian bean paste and stir-fry evenly. Add a small amount of dark soy sauce and stir-fry to color.

6. Add boiling water to cover the ingredients, bring to a boil over high heat, then add cooking wine and simmer over low heat until the beef brisket is soft (about 3 hours). Add boiling water as needed halfway through.

7. When the beef brisket is soft, there must be an appropriate amount of soup left. Pour in the potato cubes, add salt, stir fry evenly, cover and simmer until the potatoes are soft.

8. Pour a small amount of balsamic vinegar into the edge of the pot before removing from heat.

9. Serve.
