1. Clean the fish tail and set aside.

2. Add water and ginger slices to the pot and bring to a boil.

3. Add the fish tail, cover the pot and simmer for about 15 minutes (turn it over during this time).

5. Use soy sauce, water and starch to make sauce.

6. Pour into the pot and stir constantly with a spatula until it becomes a uniform and thick sauce.

7. Pour the sauce over the surface of the fish tail.

8. Sprinkle with chopped green onions and done.
