1. Ingredients: pork belly (I don’t eat much meat, so I replaced it with some pork ribs because I wanted to gnaw on the bones), soaked sweet potato vermicelli (sweet potato vermicelli), seasoning: duck egg, sweet potato starch, pepper powder, chopped green onion, salt, cooking wine, oyster sauce, soy sauce, minced ginger and peppercorns.

2.12 Marinate the chopped meat with a little cooking wine, salt and minced ginger for 20 minutes.

3.21 Add a little pepper powder (my dad uses whole peppercorns at home), beat in the duck eggs, and slowly add sweet potato starch.

5.2 Stir thoroughly into a paste and make it slightly dry. Note: I like to eat a thick layer of fried starch on top, it is particularly fragrant so I put more starch!

6. When the oil is 80% hot, slowly add the prepared meat paste into the pot. Do not stir the meat just after it is put into the pot. Wait for 10 seconds until the meat is set and then gently turn it over.

7. After all the meat is in the pot, fry it slowly over low heat, turning it over frequently to avoid uneven heating and some of it getting burnt.

8. Fry until the meat turns yellow, then drain the oil and remove from the pan. The fried crispy meat is especially delicious when eaten as is, and it goes well with some pepper and salt. You can fry more at a time and put it in the refrigerator and eat it within half a month. It can also be used to make soup. It must be fried, just to satisfy your craving occasionally.

9. Add a little soy sauce and oyster sauce to the vermicelli and mix well.

10.Put the fried crispy meat on top.

11. Sprinkle a little peppercorns and add boiling water or broth until 80% full.

12. Steam for 20 minutes after the water in the pot boils, then sprinkle with chopped green onions when serving.
