How to make Sichuan style tofu

1. The tofu is relatively hard and does not break easily when fried in oil. Cut the tofu into thick slices, heat a large iron pan over medium heat, add oil, then add the tofu slices, fry until both sides of the tofu are golden brown, remove from the pan, drain the oil, and set aside.

2. Leave a little oil in the pan, sauté garlic slices, ginger slices and peppercorns over low heat, then add bean paste and red pepper. After the red oil comes out, put the fried tofu back into the pan and stir-fry briefly. Pour in the chicken soup, add soy sauce, sugar, pepper and salt to season. Bring to a boil over high heat, stirring from time to time until the chicken soup is dry and the tofu is well-seasoned. Then you can serve it as a plate.
