1.1 Cut the green onion into sections. Cut lettuce and celery into finger-thick pieces. Slice the old ginger and set aside.

2.2 Wash the swimming crab and steam it in a steamer for 12 minutes until it is 80% cooked. Take it out and let it cool down until it is not hot to the touch. Remove the crab shell and keep it for later use. Tear off the crab gills and crab navel, and then cut the crab body into 4 pieces. Crack the crab claws with a knife.

3.3 Heat the oil in a wok over high heat until it is 60% hot, add the Sichuan peppercorns, dried bell peppers, scallions, ginger slices and garlic and stir-fry until fragrant, then add the red oil and fermented black bean sauce and stir-fry until the oil turns red.

Add green bamboo shoots and celery and stir-fry until they change color, add crab pieces and stir-fry evenly, add cooking wine and light soy sauce, add white sugar and stir-fry evenly, sprinkle with fried peanuts before serving.

Usually, the spicy crabs we eat in restaurants have all the ingredients fried in oil, and the crab pieces are also fried until half-cooked before being seasoned and stir-fried. You can use steaming instead of frying crabs when cooking at home, which is more convenient.

It is not only healthier, but also avoids having a large pot of oil left over from frying. Since the crabs have been steamed, they are basically mature. So when frying, take advantage of the high oil content in the pan and first add the raw vegetables that are not easy to release water, and then add the crabs. This will make the dish more tender.
