Hunan Braised Pork

As we all know, our great Chairman Mao grew up in Hunan. His favorite food was braised pork, so Hunan's braised pork is also very famous. However, many people find it difficult to make delicious braised pork at home, and it is difficult to make it fat but not greasy and melt in the mouth. So how to make Hunan braised pork delicious? Here are three simple methods.

Method 1

Ingredients: 850 grams of pork belly with skin, 60 grams of cooking wine, 100 grams of sugar, and appropriate amounts of salt, MSG, oil, star anise, cinnamon, dried pepper, pepper, garlic, chili, and ginger slices.

1. After the oil is boiling in the pot, add star anise, cinnamon, dried pepper, pepper, garlic and chili.

2. Blanch the pork belly with ginger slices and cooking wine, skim off the foam, cut into cubes and set aside.

3. Add a small amount of oil and a large amount of sugar back into the pot, boil it until it turns light red, then put it into a spare bowl.

4. Put the pork belly directly into the pot where sugar is boiled, and pour in a small amount of the oil just made.

5. Fry over medium heat for 1 minute and add half of the prepared brown sugar syrup.

6. Add a small amount of boiling water and cook until it is almost dry, until the soup becomes thick.

7. Add the remaining brown sugar syrup, stir the syrup into each piece of meat, and simmer for a while over low heat.

8. When the red color appears, add boiling water again and cook. When the soup turns red, add salt and MSG. Remove from heat when it becomes thick.

Method 2

Ingredients: 850 grams of pork belly with skin, 60 grams of cooking wine, 50 grams of sugar, 20 grams of red glutinous rice powder, and appropriate amounts of salt and other seasonings.

1. Steps 1 to 7 are the same as in Method 1 (Method 2 was a modified braised pork recipe by Mao Zedong’s chef who believed that eating too much sugar and salt was bad for the body)

2. When it becomes thick, add a little water, red yeast rice powder and a small amount of pepper powder, stir it on each piece of meat again, and cook on low heat for a while.

3. When the red color appears, add boiling water again and cook. When the soup turns red, add a small amount of salt and remove from the heat when it becomes thick.

Method 3

Ingredients: pork belly, sugar, star anise, cinnamon, sweet wine, red rice flour, etc.

1. Put the whole piece of pork belly into a pressure cooker and stew it. After stewing, take it out, let it cool and cut it into pieces.

2. Put the cut meat into oil and fry it. Keep the oil temperature at 80 degrees. Fry for about 3 to 4 minutes and then take it out.

3. Mix sugar, star anise, cinnamon, sweet wine and red rice flour in proportion to make a sauce, put the fried meat into it, and finally press it in a pressure cooker for 15 minutes.
