Recipe and method of quicksand filling

Ingredients for the dough: 250g flour, 3g yeast, 2g baking powder, 70g milk

Ingredients for quicksand filling: 4 salted duck egg yolks, 45 grams of sugar (ratio 2:1), a little milk, a little butter

Method: 1. Knead flour, yeast, baking powder and milk into a smooth dough, and mix sugar for 15 minutes.

2. Steam the salted egg yolks, crush them with the back of a knife, add sugar, a little milk, and butter, mix well, and make the filling.

3. Roll the dough into long strips, divide it into 10 equal parts, and flatten it with your hands.

4. Put the filling in the middle of the dough, pinch the edge tightly, arrange it on the steamer with the edge facing down, and ferment until it is twice as large.

5. Put the pot in cold water and steam it on medium heat for 10 minutes. After turning off the heat, open the lid after 3 minutes and serve.

A personal note: Don’t use too much milk, just a little bit is enough to enhance the flavor. Don't put too much stuffing when wrapping to avoid it leaking out during steaming.
