How to cook crucian carp in a pot

1. Clean the crucian carp and apply a little salt and cooking wine.

2. Use a kitchen towel to dry the surface of the fish and evenly pat it with a layer of flour.

3. Heat the oil in the pan until it is 80% cooked, add the fish and fry until golden brown, then remove and drain the oil

4. Prepare the seasonings when frying the fish. Chop the green onions and Sichuan pepper into fine pieces. Take a slightly larger bowl and mix soy sauce, salt, chicken stock, chicken juice, vinegar, ginger juice, a tablespoon of chili sauce, a tablespoon of bean paste, and water.

5. Leave a little oil in the pot, add onion, chili powder, star anise and peppercorns to make them fragrant.

6. Add the seasoning in the bowl and the fish into the pot, bring to a boil over high heat, then simmer over low heat for 15-20 minutes. Turn the fish over halfway through the cooking process and cook until both sides of the fish are well-seasoned and the soup is almost dry.
