(4) It is best to use northern tofu first Northern tofu has a firmer texture and is suitable for frying. Tofu that is too tender, such as rennet tofu, is not suitable for frying. First, blanch it in salt water so that it won’t break easily when cooking. Remember to boil the water in the pot, add a small spoonful of salt, and blanch the cut tofu before cooking to maintain its integrity. Secondly, it should be noted that although rennet tofu is delicate and tender, it is easy to break, so it should be steamed in a pot for 20 minutes before cooking. After it cools down, it can be cut into various shapes according to your cooking needs. In addition, northern tofu is tough and not easy to break, but it must also be handled with care. When stir-frying, you can fry it in hot oil for 1-2 minutes, and then turn it over after the surface becomes hard. Finally, no matter what kind of tofu you use, do not use a spatula to scoop it.
