How to fry tofu without breaking it

As we all know, tofu is made from soybeans. Tofu also contains a lot of protein. It also has many benefits to the body. There are many ways to eat tofu. For us Orientals, tofu pudding is often seen on the breakfast table. In fact, tofu can also be fried. So how do you fry tofu without it breaking? Let’s take a look at it together.

Frying tofu in a non-stick pan:

(1) The fire should not be too big

Always keep the heat at medium, which will not only make the surface of the tofu crisp quickly, but also seal the moisture in the tofu and keep the inside tender and smooth.

Of course, you can also fry it over low heat to achieve a browned effect, but the tofu will be too tough inside.

(2) Move the pot but not the spatula

Turn the pan when frying so that different parts of the tofu can be heated evenly.

During this process, do not use a spatula, spoon, chopsticks, etc. to move the tofu in the pot.

(3) Don’t be too impatient

When the tofu is fried until the skin is crispy and then turned over, it will not stick to the bottom at all, so you have to control the frying time well and don't be too impatient.

When you shake the pan, you feel the tofu shaking easily, then you can turn it over.

On the contrary, if the bottom is attached to the pan, do not move it and continue frying for a while.

(4) It is best to use northern tofu first

Northern tofu has a firmer texture and is suitable for frying. Tofu that is too tender, such as rennet tofu, is not suitable for frying.

First, blanch it in salt water so that it won’t break easily when cooking. Remember to boil the water in the pot, add a small spoonful of salt, and blanch the cut tofu before cooking to maintain its integrity. Secondly, it should be noted that although rennet tofu is delicate and tender, it is easy to break, so it should be steamed in a pot for 20 minutes before cooking. After it cools down, it can be cut into various shapes according to your cooking needs. In addition, northern tofu is tough and not easy to break, but it must also be handled with care. When stir-frying, you can fry it in hot oil for 1-2 minutes, and then turn it over after the surface becomes hard. Finally, no matter what kind of tofu you use, do not use a spatula to scoop it. Instead, use the back of the spatula to gently push it. This will not only allow the tofu and the ingredients to absorb their flavors, but also prevent the tofu from being broken by the spatula.
