How to make coconut cake pie

The method of making coconut cake pie is not as complicated as everyone thinks. Prepare the tableware and seasonings first. Then start following the steps and remember to control the heat well.

1. Remove the core of the Oreo cookies and crush them into small pieces. Mix 20g melted butter and add a small amount of water or milk, add little by little, and mix the biscuits into dough

2. Use your hands to spread the dough evenly in the mold little by little. Oreo dough is not as easy to flatten as regular pie crust. So milk or water must be added slowly. If you add too much, the dough will become thinner and more difficult to handle.

3. Sift 80g of low-gluten flour, baking powder and salt together, cut the unthawed butter into small pieces and put them into the flour.

4. Use a spatula to stir and cut the butter into loose pieces. This job requires a lot of patience and you can try it when necessary. Take 30 grams of kneaded crispy grains and put them in the refrigerator for later use

5. Add 30g of flour to the remaining pastry and mix it into granules with a spatula.

6. Add 2 egg yolks and mix well

7. Dissolve the instant coconut powder with warm water. If you don’t have coconut powder, you can use coconut milk bought from a foreign trade store. It is not recommended to use coconut milk bought from a supermarket because the taste is too light.

8. Pour in the coconut milk and stir evenly. It doesn’t matter if there are small lumps in it. That’s the unmelted butter. I think it tastes better this way.

9. Beat the egg whites with a whisk until they are coarsely foamed, add 15g of white sugar and beat into meringue

10. Add egg whites to the batter three times and mix well.

11. Take out 30g of crispy grains from the refrigerator and mix them with the coconut filling. Grab them a few times with your hands and rub them into coconut crispy grains. 12. Because the batter is relatively rich, I prepared a few small paper cup molds. Don't bake the cake directly in this paper cup mold. Put a small tart mold underneath, otherwise the cake will have no shape and collapse.
