1. Prepare the baby potatoes.

2. Prepare star anise, cinnamon, bay leaves and chili peppers.

3. Cut the green onion into sections and the ginger into slices.

4. Use a brush to scrub the small potatoes clean.

5. Pour oil into the pan and fry the drained potatoes.

6. Fry until the potatoes are wrinkled and slightly yellow, then remove from the pan and place in a casserole.

7. Leave some oil in the pan, add star anise, cinnamon, bay leaves, chili, onion and ginger and stir-fry until fragrant.

8. Pour in soy sauce, sugar and appropriate amount of water and bring to a boil.

9. Pour the fried soup into the casserole, making sure the soup covers the potatoes. Bring to a boil over high heat, then reduce to low heat and simmer for 30 minutes until potatoes are soft.
