Ingredients: 1 black chicken, 1 American ginseng, 2 slices of ganoderma, 5 slices of angelica, 5 slices of astragalus, 8 red dates, 20 wolfberries, 1 sweet corn, 2 slices of ham, 8 mushrooms, 2 longans, 2 grass fruits, 5 slices of ginger, 2 sections of green onions, 3 spoons of rice wine, salt to taste

practice:

1. Rinse the dried mushrooms with water, soak them in water (just enough to cover the dried mushrooms), and cut the stems.

2. Wash the surface and abdominal cavity of the black chicken, and cut off the nails and tail. Put the chicken in a casserole, cover it with water, boil it over high heat, and skim off the blood foam.

3. Add American ginseng, ganoderma, angelica, astragalus, red dates, wolfberry, ham, shelled longan, mushrooms and mushroom water, grass fruit, ginger, onion, and rice wine to the pot. Bring to a boil over high heat, then simmer over low heat for 1.5 hours.

4. Cut the corn into five sections, add it to the pot, continue to stew for another half an hour, and add appropriate amount of salt to taste

5. Seasoning for dipping chicken: two spoons of original soup, a pinch of coriander, good quality light soy sauce, a little sesame oil, a little chili oil, mix well.

two. Dragon Horse Boy Soup

Material

Ingredients: 10g seahorse; 15g shrimp; 1 young chicken (about 750g),

Accessories: 1 whole scallion, some sliced ​​ginger, seasoning: 15 grams of rice wine, a little salt and MSG, 500 grams of fresh soup

(1) Soak the seahorses in warm water for 10 minutes.

(2) Clean the chicken, remove the butt, wings and head, then break the leg bones, cut it open from the back, and make a few cuts on the spine to make the chicken lie flat. Then blanch the chicken in boiling water for 3 minutes to remove the blood.

(3) Rinse the chicken and put it into the pot. Place the soaked seahorses around the chicken, shrimp in the middle, a whole scallion and some ginger slices, 15 grams of rice wine, a little salt and MSG, and 500 grams of fresh soup. Then cover the pot and steam for 2 hours before serving.

(4) Before serving, remove the green onions and ginger slices.
