How to make fish-flavored eggplant box

11. Continue to heat the oil in the pan until it is 70% to 80% hot, add the fried eggplant boxes and fry again until both sides are golden and crispy;

12. Remove from the water and drain off excess fat.

Chop the pepper and set aside; cut the shallot into chopped green onions; mince the ginger and garlic; put 1 tablespoon soy sauce, 1 tablespoon cooking wine, 1 tablespoon balsamic vinegar, 1.5 tablespoons sugar, a little salt, 1 tablespoon water starch, 3-4 tablespoons water into a small bowl, stir well to make a bowl of sauce and set aside;

14. Heat the wok, add a little cooking oil, and sauté the minced ginger and garlic over low heat until fragrant;

15. Add the chopped pepper and continue to stir-fry over low heat until red oil comes out;

16. Add the sauce, boil over high heat, and cook until thick. (You can adjust it yourself. If you like it thinner, you can add more water. If you like it thicker, cook it for a while longer.)

17. Add a few drops of sesame oil;

18. Finally, sprinkle with chopped green onions and turn off the heat.

19. Place the eggplant boxes on a plate and pour the fish sauce on them.
