How to make Southern Fried Meatballs

4. Stir evenly first, then stir clockwise until the meat filling becomes sticky and firm.

5. Apply a thin layer of vegetable oil on the bottom of a flat plate and place the squeezed meatballs on the plate.

6. Put a clean pot on the heat, add 25 ml of vegetable oil and shake well. When the oil temperature rises to 40% hot, add the meatballs.

7. When the meatballs are set in the pan, flatten them with a hand spoon and shake the wok.

8. When the bottom is fried until golden brown, drain the excess vegetable oil, turn the spoon over, fry the other side, and continue to press the meatballs with a hand spoon to make them flat.

9. When the bottom is shaped, add onion, ginger water, soy sauce, remove from the water, add salt, sugar, and water to a boil, then simmer on low heat for a while.

10. In another pot, ladle in the original soup of meatballs, add black fungus and day lily, bring to a boil, and thicken with starch.

11. Pour the wood ear and day lily into the plate as a base.

12. Add appropriate amount of boiling water and soy sauce to the pot of meatballs, simmer the meatballs on low heat. When the meatballs are cooked, scoop them out with a flat plate, place them on top of the fungus and day lily, and surround them with cucumber slices. Thicken the soup in the pot with water starch, add cooking oil and stir well, then pour it on the meatballs and squeeze it into a paste.
