How to make eight-inch heart-shaped chiffon cake

1. Prepare various materials.

2. Separate the egg whites and yolks and put them into two oil-free and water-free containers respectively.

3. Add 20 grams of fine sugar into the egg yolk.

4. Use a manual egg beater to beat until the sugar is completely melted and the egg liquid is uniform.

5. Add vegetable oil and milk.

6. Continue stirring until the water and oil are blended and even.

7. Sift in low flour and baking powder.

8. Stir until the egg batter becomes smooth without any particles.

9. Add cream of tartar to the egg whites.

10. Beat with an electric whisk at low speed until coarse foam is formed.

11. Add one third of fine sugar.

12. Beat at medium-high speed until obvious lines appear in the egg white paste.

13. Add one third of sugar and continue beating at medium-high speed until wet foam forms, i.e. the whisk pulls out a large curved hook.

14. Add the remaining sugar and continue beating until dry foam is formed. Pull out the right-angle hook of the whisk and stop beating.

15. Add one third of the egg white paste into the egg yolk paste.

16. Mix evenly by cutting, stirring and flipping techniques.

17. Add another one third of albumin paste.

18. Use the same method to stir evenly.

19. Pour the egg yolk paste into the remaining egg white paste.

20. Stir evenly using a folding technique. Be careful not to make circles to avoid defoaming.

21. Preheat the oven to 165 degrees with upper and lower fire.

22. Pour the egg mixture into an eight-inch heart-shaped mold and shake it on the chopping board a few times to remove large bubbles. Bake in oven for 50 minutes.

23. After baking, take out of the oven quickly, turn it upside down on the baking rack to cool, then press all sides of the mold with your hands to manually demould the cake. This is the front view of the cake after successful demoulding.
