1. Slice the bitter gourd and blanch it in boiling water at high temperature before use. The bitterness of bitter melon mainly comes from momordica charantia (known as "high-energy lipid-clearing factor") and momordica glycosides. After being exposed to high temperatures above 80°C, these two substances have been destroyed. After being rinsed with cold water, the bitter melon loses its bitterness, and the heat-sensitive nutrients in it are gone. Therefore, it is not recommended to use high temperature method to process bitter melon. 2. Chilling bitter melon with ice to below 8 degrees Celsius before eating can reduce its bitterness.
