How to make spicy braised pig's trotters

10. When the marinade starts to smell good, add the pig's trotters, and season with salt, cooking wine, light soy sauce, dark soy sauce, pepper, and chicken essence.

11. Bring to a boil over high heat, then reduce to low heat, cover and simmer for 1 hour. If you don’t like the strong smell of spices, you can remove the spices after half an hour.

12. Remove from heat and serve.
