Accessories: oil, salt, meat tenderizer, starch, ginger, garlic, soy sauce, cooking wine, sugar, MSG

1. Wash the eggplant and cut into strips.

2. Cut the lean pork into shreds, mix with salt, tenderizer and starch, and marinate.

3. Place the wok on the fire, heat it, add the eggplant shreds, stir-fry until cooked, and serve.

4. Put oil in the pan and heat it to 50%.

5. Add the marinated shredded pork and stir-fry until it changes color.

6. Add shredded ginger and minced garlic and sauté until fragrant.

7. Add soy sauce, cooking wine, green and red pepper shreds, and fried eggplant shreds, stir-fry, add salt, sugar, and MSG, and stir well.

Eggplant is very nutritious, containing protein, carbohydrates, vitamins, calcium, iron and other nutrients. Regular consumption of eggplant can effectively reduce high blood lipids and high blood pressure. It can also prevent and treat gastric cancer, resist aging, and has the effects of clearing away heat, activating blood circulation, reducing swelling and relieving pain.
