1. Cut the meat into slices

How to make Guilin rice noodles

1. If you are cooking rice noodles at home or want to cook them faster, you can put the dry rice noodles in cold water and cook them frequently with chopsticks. When the water boils, turn to low heat and cook for three to five minutes. The degree of softness and hardness varies from person to person, so you can taste it yourself. After taking it out, soak it in cold water for about a minute immediately.

2. If the noodle shop needs to soak a large amount of rice noodles, you can soak the dry rice noodles in cold water or warm water of about 50 degrees the night before, but do not soak them in boiling water overnight. When you use them the next day, soak them in boiling water for about ten minutes. This depends on the water temperature when you soaked the noodles the night before. You can taste the softness and hardness yourself. After taking them out, soak them in cold water for about one minute.

3. The rice noodles used by noodle shops to cook noodles for customers do not need to be soaked too soft, because you still need to boil it in water for three to five minutes. If it is soaked too soft and then cooked, the rice noodles will not be chewy.

Should Guilin rice noodles be soaked in boiling water or cold water?

Guilin rice noodles come in two types: dry and wet.

The wet ones are freshly made. This kind of rice noodles are the same as the blanched rice noodles you asked about. They are not easy to store for a long time. If they are stored for a long time, they will go bad and change their taste. They will become broken in the freezer. You can only enjoy the taste if you eat it right after brewing it.

Dry rice noodles are different, they need to be soaked. The soaking time is different. If you want to eat it faster, add hot water. According to my experience, generally speaking, soak it in cold water for half an hour, drain the water and soak it in water of about 50 degrees for half an hour, boil the water and add the soaked powder and cook for another three minutes. Serve and add ingredients prepared according to your own taste, and you can eat it. This way, the powder will be soft and have a certain hardness.

If you are not in a hurry to eat the noodles, it is best to keep soaking them in cold water. In the summer when the temperature is high, remember to change the water every five or six hours. This way you can keep it for a day or two, but not too long. If you are not in a hurry to eat, you don’t need to soak it. Every time you change the water, you must control it to ensure the powder is fresh.

Powder that has been soaked in cold water for a long time does not need to be cooked again when eaten. Just blanch it in boiling water, take it out and add ingredients to eat. Guilin rice noodles can be fried, boiled, blanched or eaten cold. That depends on individual preference, but from a health perspective it is best to add a clove of crushed garlic to disinfect and sterilize the food. Please point out any shortcomings in my experience and I hope you will be satisfied. Most of the noodles sold in Guilin noodle shops are processed into lumps and sent from processing factories. This kind of noodles only needs to be placed in boiling water and stirred with chopsticks; there is no need to soak them beforehand.

If you use dry powder, soak it in cold water the night before. It is best to use settled water, such as well water. It is better if it does not have bleach. If you don’t have bleach, connect it to tap water and leave it for a few hours before using it to soak the powder. This way it will not break easily. If the dry powder you want is very fine, you don't need to soak it for more than ten hours in advance. Four or five hours in advance will be enough. Use warm water, about 30 degrees. Don't soak it for too long. The soaking time should be shorter in hot weather. If you need emergency help and the soaked noodles are not enough when selling them, just wash the dry noodles with cold water, boil them in cold water for about 10 minutes, take them out and soak them in cold water. This is not completely standard. You need to pay attention during the cooking process. It may not take that long. Just try it out.
