Open the lid of the fresh-keeping box and place it in a cool place to ferment for 8 to 12 hours. This is very important. The texture and flavor of the bread all depend on this long fermentation. Put the remaining 300 grams of flour, 12 grams of yeast, and 30 grams of salt into a container. Put the dough fermented 12 hours ago into this container and stir. Xiao Xiao San Fu uses an electric mixer. If you don’t have an electric mixer at home, it’s also very simple. Just stir with chopsticks. An electric mixer only needs to stir for 3 minutes, and chopsticks need to stir for about ten minutes. Cover the container with a wet towel and wait for 20 minutes.

The next step is kneading the dough. The dough should be kneaded to a level that is acceptable if you can gently pull it into a light-transmitting thin sheet. The dough should be a little sticky at this point.

Now the oven is ready. Pour hot water into a plate and place the plate at the bottom of the oven.

Hot water has two functions. One is to keep the oven warm, which can speed up the fermentation of the dough. The other is to keep the oven moist to prevent the surface of the dough from drying out.

Put the dough in a baking tray, apply some oil on the baking tray to prevent the dough from sticking to the baking tray, and put the baking tray in the oven for secondary fermentation.

The fermentation lasts about two hours. When the dough doubles in size, you can take out the baking tray.

Now it's time to start kneading the dough. Don't knead too hard, just knead for one minute. At this time, if you like, you can add some nuts, raisins and other snacks to the dough according to your taste.

Use your palm to gently press the dough to flatten it into a pancake.

Fold the dough in half, then in half again, to form a fan shape.

Next, cover the dough with a wet towel and wait for 10 minutes.

Place the dough on a baking sheet dusted with cornmeal.

Cover the dough with a dry towel and wait for an hour.

This step is optional. If you like your bread to have a crust, you can add 100g of starch to 200g of water and spread it on the dough.

Use a knife to make several 1 cm thick slits in the dough. Standard bread usually has a cross on it.

If you don't make these cuts, the crust of the bread will prevent it from expanding and becoming fluffy during baking.

Finally, you can start baking. You still need to put a shallow tray filled with water at the bottom of the oven, turn on the fire, adjust the temperature to 200 degrees, bake for an hour, take out the shallow tray filled with water, turn off the oven, and wait for 30 minutes and it's done.
