Steps to make secret spicy fish fillet

1. Cut a black fish into pieces and clean it (because there is a lot of mucus, it needs to be cleaned several times)

2. Wash the dried chili peppers, peppercorns, onions, ginger and garlic and set aside;

3 Marinate the fish: Pour light soy sauce, dark soy sauce, pepper, cooking wine, salt, ginger slices and scallions into the washed and drained fish and marinate for 5 hours;

4 Lightly spread a thin layer of flour on the marinated fish to prevent the fish skin from sticking to the pan, but do not use too much flour;

5 Pour enough oil into the hot pan, heat and fry the fish until golden brown;

6 After frying again, remove from the pan and drain the oil;

7 Add oil to a hot pan and fry chili peppers, peppercorns, garlic and ginger for about 5 minutes. Do not overcook the fire.

8 Add the fried fish pieces and continue frying. Sprinkle with green onions after the fish is well-seasoned.

Tips

1. The fish pieces should not be too big, otherwise it will be difficult to taste (we cut them a little too big this time because we were lazy, which obviously affected the taste);

2. The longer the fish is marinated, the better it tastes. Add more salt and cooking wine to add flavor and remove the fishy smell.

3. The drier the fish is, the better.
