1. Fried chicken legs with potatoes

Ingredients: 3 chicken legs, 2 potatoes, appropriate amount of oil, appropriate amount of salt, 12 dried mushrooms, 1 green pepper, appropriate amount of green onions, 2 tablespoons of braised soy sauce, 1 tablespoon of cooking wine, 1 tablespoon of oyster sauce, a little chicken essence, appropriate amount of ginger, appropriate amount of garlic.

(1) Prepare all raw materials and auxiliary materials. Among them: wash the drumsticks, chop them into pieces and set aside; peel the potatoes, cut them into pieces, wash them and set aside; wash the dried mushrooms, soak them in warm water and set aside; wash the green peppers, cut them into sections and set aside; chop the onions, ginger and garlic.

(2) Heat oil in a pan, add potato cubes, and stir-fry over high heat until the surface starts to bubble and soften. Remove from the pan and set aside.

(3) Heat oil in another pan to 70% hot, add onion, ginger, garlic, and green pepper segments, stir-fry over low heat, and remove the green pepper and onion segments.

(4) Pour in the drumsticks and stir-fry over high heat. Add cooking wine to remove the fishy smell, add braised soy sauce for color, add oyster sauce for flavor, and add an appropriate amount of water used to soak the mushrooms.

2. Stir-fried chicken thighs with chestnuts

Ingredients: 136g chestnuts, 248g chicken legs, appropriate amount of dark soy sauce, appropriate amount of light soy sauce, appropriate amount of pepper, appropriate amount of chicken powder, appropriate amount of sugar, appropriate amount of salt, appropriate amount of sesame oil, appropriate amount of garlic, appropriate amount of ginger, appropriate amount of scallion, appropriate amount of cornstarch, and appropriate amount of corn oil.

(1) Wash and cut the chicken legs into pieces and put them into a soup bowl.

(2) Pour in an appropriate amount of dark soy sauce, an appropriate amount of light soy sauce, an appropriate amount of chicken powder, an appropriate amount of pepper powder, an appropriate amount of sugar, an appropriate amount of salt, and mix well with chopsticks.

(3) Pour in an appropriate amount of sesame oil and cornstarch, mix well, and marinate for 30 minutes. Add an appropriate amount of clean water to the pot, boil the water, wash the chestnuts with clean water, pour the chestnuts into the pot, cover the pot, and cook for 10 minutes. Pour out the water in the pot.

(4) Peel the chestnuts while they are still hot, peel the garlic, peel and cut the ginger into shreds, heat the pan, pour in an appropriate amount of corn oil, sauté the garlic and ginger shreds, and add the marinated chicken pieces.

(5) Add an appropriate amount of water to the bowl containing the marinated chicken, shake well, cook the chicken until it is 50% cooked, add the chestnuts, and pour in the water in the bowl.

(6) Cover the pot and simmer for 10 minutes. Stir fry several times to make the color even. When the sauce is reduced, add the scallion segments. Wet the casserole with water, heat it, and serve.
