1.1 Heat the butter over medium heat until melted, add water and bring to a boil

6. Finally, add cheese, stir well, remove from heat and let the dough spread until warm. The Swiss cheese cubes are medium-soft and melt in about 30 seconds. Beat the eggs and add the egg liquid into the dough in batches, stirring every time you pour 1 tablespoon of the egg liquid. Continue adding more until the egg liquid is completely absorbed.

7. Stir the batter until it becomes this state: the batter forms an inverted triangle when it falls, and the falling speed is very slow. The egg liquid may not be used up or be enough. My eggs are relatively large, so there is still about half an egg's worth of egg liquid left after using them.

8. Preheat the oven to 210 degrees, line the baking tray with greaseproof paper, and scoop the batter onto the greaseproof paper one spoonful at a time in a circle. The finished puff has a diameter of 10 cm, which is very large. It is recommended to use a piping bag to squeeze it into small puffs, which will look better after it expands.

9. Finished product. The expansion degree is okay, but it’s too big, a bit like a pineapple bun!
