Method 1:

Ingredients: a fresh rabbit, ginger, garlic, dried chili peppers, peppercorns, Sichuan Beixian bean paste, bean powder, shallots, salt, MSG, and cucumber slices.

1. Cut the rabbit into small pieces, mix with cooking wine, bean powder and a little salt and set aside.

2. Heat the oil to 70% hot, then stir-fry ginger, garlic, dried chili peppers, Sichuan peppercorns, and Sichuan Beixian bean paste until fragrant. Then pour broth or water into the pot. The height of the broth must be enough to submerge the rabbit pieces.

3. After the soup boils, pour the rabbit pieces into the pot. After the pot has been boiling for 5 minutes, add the cucumber slices (because the rabbit meat will become tougher as it is cooked). After cooking for a while, add the MSG, remove from the pot, serve on a plate and sprinkle with green onions. This dish is bright red in color, and the rabbit meat and cucumber are tender and spicy. The soup is especially delicious when mixed with rice.

Method 2:

Step 1: Cut the rabbit meat into small pieces and wash it with clean water. Marinate with salt, cooking wine and starch for 10 minutes. There should be enough starch to ensure tenderness.

Step 2: Heat the pan and add oil. Put the marinated rabbit meat into the pan and stir-fry until it changes color, then stir-fry for another minute and remove from the pan.

Step 3: Heat up the oil in a pan again and add the peppercorns. If you like the spicy taste, you can add more peppercorns. Add ginger and garlic and sauté until fragrant. Add bean paste and stir-fry until red oil comes out. Add millet pepper, cut into small pieces and stir-fry until fragrant. Add water and bring to boil.

Step 4: After boiling, add rabbit meat and cook for two minutes. Add Erjingtiao, and then add shredded young ginger. Salt and MSG for seasoning. Remove from the pan.

1. You can add more oil to make it taste better.

Ingredients: 450 grams of rabbit meat

Accessories: 100g cucumber

Seasoning: 4g salt, 10g red pepper, 5g soy sauce, 2g MSG
