From the third day on, use 1000 grams of salt to marinate in layers again, turning the food over every two days. After turning it over five times, press it tightly with stones and seal it in the jar for storage. It will take a total of 20 days to become a light yellow, crisp and tender food.

2. Pickling method. Gently pick up the pickled lettuce embryos and put them down to prevent the lettuce from breaking. When pickling in sauce, for every 10 kg of lettuce embryos, add 5 kg of thin sweet noodle sauce, 2 g of saccharin and 12 g of sodium benzoate, mix them together to form a mixture, and then pickle in sauce for 1-3 days to get a reddish-brown, sweet, crisp and fragrant finished product.

3. Fresh lettuce can also be seasoned with salt, sugar, rice wine juice, cooking wine, dried chili peppers and spices, add appropriate amount of cold boiled water, mix well, put into a jar and seal it. It can be eaten after soaking, and it also has a unique flavor.
