Traditional tofu pudding recipe

1. Wash the soybeans with clean water, wash away the sand and dust, and soak them for about 8 hours.

2.1 Take a pot, put a gauze bag on it, pour in the soy milk from step 2, tighten the bag mouth, and squeeze out the soy milk without impurities

3.2 Pour the soybeans into the juicer, add 1500 ml of water, press the switch and blend into pulp

4.1 Put the sweet potato powder into a gauze bag, add 80 ml of soy milk, close the bag, rub the bag with your hands to mix it evenly, and remove impurities; put the gypsum powder into the gauze bag, add 30 ml of soy milk, close the bag, rub the bag with your hands to mix it, and remove impurities for later use

5.2 Open the gauze bag in step 3, add the remaining 1500 ml of water, stir the dregs evenly with your hands, close the bag, and squeeze out the soy milk again.

6. Heat the soy milk from step 3 to between 85 and 90 degrees, mix the sweet potato starch paste and pour it into the soy milk from step 5, stir well, and turn off the heat.

7. Pour the gypsum slurry into a deep pot and stir evenly. Take the soy milk from step 6 and pour it into the deep pot in one go. Cover the pot and let it stand without moving.

8. After the liquid solidifies and the shape is fixed and the bubbles are eliminated, use a tofu spoon or spoon to scoop off the uneven surface of the crust. When eating, use a tofu spoon or spoon to scoop about 0.2-0.3 cm thin slices and put them in a bowl.
