1. Wash, peel and cut potatoes and carrots into pieces, soak them in water and set aside. Slice the old ginger.

3. Rinse the blanched ribs, drain and set aside.

4. Heat the pan with cold oil, pour in the ginger slices and fry until the oil is hot.

8. Pour in hot water, bring to a boil over high heat then reduce to low heat.

9. Cover the pot and simmer over low heat until the ribs are soft.

10. Add the curry cubes and cook over high heat until the curry is fully melted and the soup is thick.

11. After that, collect the sauce and stir fry frequently to avoid burning the pan. You can add appropriate salt according to your taste.

12. Place the rice in a small bowl upside down onto a plate, fill it with curry pork ribs and sprinkle with a few red pepper rings for decoration. ^_^
