How to make scallion chicken noodles

1. Put the chicken into boiling water and cook for more than ten minutes. Add ginger slices into the pot while cooking. Then tear the chicken into small strips and pour a spoonful of fish sauce and a spoonful and a half of soy sauce into the chicken to season it.

2.1 While cooking the noodles, you can fry the scallion oil. Dice the purple onion. Purple onions have a stronger taste than white ones, so try to use purple ones when frying onion oil. When the oil pan is 50% hot, put the diced onion in and stir-fry over low heat until fragrant. Remove from heat when the noodles turn brown on all sides. Remove the fried onion cubes from the heat. 3.2 Chop some chives and cook some noodles. The noodles I used this time were the whole egg and shrimp noodles I bought from Guangzhou.

4. Pour the marinated chicken and the sauce into the noodles, add vinegar, sugar and seasoning according to your taste, sprinkle some chives and enjoy.
