1. 500 grams of steamed bun flour, 100 grams of oatmeal, 300 grams of water, 60 grams of fine sugar, and 5 grams of yeast. (The oatmeal can be ground into powder in advance using a food processor or added directly to the flour)

2. Divide the warm water into two parts, melt the granulated sugar and yeast in each part and pour into the flour.

3. Stir evenly with chopsticks.

4. Add oatmeal powder and mix well.

5. Knead into smooth dough.

6. Ferment for about 30 to 40 minutes. The fermentation time is slightly different in winter and summer. The lower the temperature, the longer the fermentation time. To determine whether the dough has been fermented, you can put some flour on your finger and then insert it into the dough. If the hole in the dough does not shrink, it means that the fermentation is complete.

7. Use a rolling pin to roll out the dough and deflate it.

8. Fold in half and roll it thin again. Repeat 4 to 5 times until the surface is smooth.

9. Roll it into a cylinder, roll it into a round shape and make it smooth.

10. Cut into equal parts. The size of the steamed buns can be divided into 12 or 18 pieces according to personal preference.

11. Apply oil on the surface of the steamer, place the steamed buns evenly in the steamer, and let them ferment for about 15 minutes.

12. Fermentation is complete and the volume has slightly expanded.

13. Bring water to a boil and steam for about 12 minutes.
