1. Wash the spinach and blend it in a blender to make spinach juice

2. Divide the flour into two parts, add spinach juice to one part

5. Mix step 4 into dough and knead it evenly.

6. Cover the two doughs in step 3 and step 5 with plastic wrap and let them rest for 15 minutes.

7. Use the time for the dough to rest to make the topping. Wash and cut the onions into shreds.

8. Put the beef slices into boiling water and blanch them, then remove and drain.

9. Put soy sauce, mirin, rice wine, dark soy sauce and sugar into a pot, add appropriate amount of water and bring to a boil, turn to low heat and simmer until it is concentrated to half, turn off the heat and serve in a bowl

10. First pour the oil into the wok, heat it up, then add the onion shreds and fry until fragrant

11. Add the blanched beef fat in step 10 and stir fry evenly.

12. Pour the cooked sauce in step 11 and mix well (step 9), cook for a while, pour it on the rolled noodles

13. Flatten and overlap the two doughs from step 6.

14. Roll the mixture from step 13 into a slice about 0.5 cm thick.

15. Cut the dough from step 14 into noodles about 1cm wide.

16. Sprinkle some flour on the chopping board (to prevent the noodles from sticking together), use both hands to rub the noodles into cylindrical strips (rub them one by one), and adjust the thickness according to your preference

17. After kneading all the noodles, put them into boiling water and cook them. Because the noodles are very chewy, the cooking time is slightly longer than that of ordinary noodles.

18. Take out the cooked noodles, drain the water, put them in a plate, cover with the fried beef and onions, and mix the vegetables and noodles before eating.
