1. First wash the duck eggs and cook them, then peel them and put them in a pot with water to cover the eggs. Add a spoonful of dark soy sauce, a spoonful of soy sauce, a little five-spice powder and a little salt. I also added the juice from making pork ribs jelly to enhance the flavor. Cook until the duck eggs are well-seasoned.

2. Wash the pork, cut into small pieces and chop finely, add a little salt and chicken essence in the middle, add a spoonful of braised egg sauce to enhance the flavor while chopping, then add an egg white and two spoonfuls of starch, and chop until the tendons are formed. Cut one braised egg into quarters and mix them. I made eight meat buns and only used two braised eggs.

3. Put two teaspoons of yeast powder in a bowl with warm water. Put the flour in a large bowl, add a teaspoon of baking soda and a teaspoon of salt, then mix the yeast water into the flour. Slowly add water to mix the flour into a cotton-like state, then knead it into dough and set it aside to ferment. It's very hot here, so we turned on the air conditioner and fan. It took almost two hours to ferment.

4. The fermented dough has become larger and has small holes inside. Knead out the air and you can wrap it.

5. Pinch the dough into small pieces, roll it into strips, and cut into small pieces.

6. Flatten the dough, then shape it into a small bowl and place a small boiled egg underneath.

7. Fill with minced meat.

8. Then pinch the edges to seal the mouth, turn it over and put it in the pot for the second fermentation.

9. The second time the sugar rises for ten minutes, steam it in cold water for fifteen minutes, and then open the lid five minutes after steaming.
