How to make pumpkin milk ice cream

1. Cut the pumpkin into thin slices and steam it; press the pumpkin slices into puree; put it into a flour sieve and press it with a spoon; scrape the pumpkin puree from the back of the flour sieve. The sieved pumpkin puree is very fine. (If you don't want to go through so much trouble, just steam it, add 50ml of milk and blend it in a blender until smooth)

2. Put the egg yolk and sugar into a small pot and stir evenly; slowly pour in 250ml of milk; heat over low heat, stirring while heating. This process requires patience and takes a long time; heat the custard until it is thick and you can scratch it on a wooden spoon and turn off the heat; place the small milk pot in a basin of cold water and continue stirring until it cools down.

3. Beat the whipped cream with an electric whisk until 60% fluffy, pour the cooled custard into the whipped cream and stir evenly; add 50ml of milk to the pumpkin puree, stir evenly and mix with the whipped cream custard; put it into a fresh-keeping box and place it in the freezer of the refrigerator, take it out and stir it every 1 hour, a total of 4 to 5 times. After stirring 4-5 times, wait 4-5 hours before taking it out. The ice cream just taken out of the refrigerator may be hard. Leave it at room temperature for a while and you can scoop it out easily.
