1. Raw materials

The main ingredient is 1 pair of bamboo shoots and chicken legs. 2 eggs. Seasoning: 500 grams of vegetable oil (actual oil consumption: 50 grams), 30 grams of cooking wine, 5 grams of salt, wet starch, 5 grams of MSG, 15 grams each of onion and ginger, and 10 grams of pepper salt.

2. Production process

(1) Cut the raw chicken leg open, separate the bones into handles, cut the tendons with the tip of a knife, make numerous small holes, and soak it in cooking wine, MSG, salt, and chopped green onions and ginger juice for about 1 to 2 hours. (2) Shake off the scallions and ginger from the soaked chicken legs, dip them in a thick paste made from egg white and wet starch, fry them in hot oil over high heat for about 15 minutes, remove from the pan and dip them in salt and pepper before serving.

500 grams of peanut oil (80 grams of actual oil consumption), 10 grams of salt, 10 grams of MSG, 5 grams of Shaoxing wine, appropriate amount of dry cornstarch, and 50 grams of breadcrumbs.

3. Production Process

1. Use a knife to remove the bones from the chicken legs, then use the back of the knife to loosen the chicken meat, add salt, MSG and Shaoxing wine and marinate for 30 minutes.

2. Beat the eggs, add water and cornstarch to make a paste. Coat the marinated chicken legs with the paste and then coat them with bread crumbs for later use.

3. Heat oil in a pan, when the oil temperature reaches 100 degrees, put the chicken legs in and fry until crispy on the outside and tender on the inside, then scoop into a plate.

Ingredients:

5 chicken legs (about 500 grams), 2 shallots, 1 tablespoon ginger juice, 1 tablespoon shrimp paste. Make the marinade with 1/2 teaspoon of sugar, 1 tablespoon of wine and 1/2 tablespoon of cornstarch.

Peel and clean the shallots, chop them into fine pieces, and mix them with ginger juice, shrimp paste and marinade.

③Mix the above ingredients with chicken thighs and marinate for 1 hour.

Heat the oil until it is very hot, put in the chicken legs and fry until slightly yellow, then turn to medium heat and fry until cooked (about 10 to 15 minutes), remove from the heat, filter out the oil, and it is ready to eat.
