Ingredients: 250 grams of soaked sea cucumber, 25 grams of soaked magnolia slices, 25 grams of soaked mushrooms, 25 grams of coriander, 25 grams of cooked lard, a little cooking wine, 3 grams of MSG, appropriate amount of salt, and 2 grams of pepper. Fresh meat soup

practice:

1. Wash the soaked sea cucumber and cut it into slices along the length direction, with the large slices being cut into three slices and the small slices into two slices; wash the magnolia leaves and cut them into slices; wash the mushrooms, remove the stems and break them into small pieces; wash the coriander and detoxify it.

2. Add water to the pot, bring to a boil, add in sea cucumber slices, magnolia slices and mushroom slices, blanch them, remove from the pot, drain the water and serve in a soup bowl.

3 Put the pot on the fire, put in the cooked lard and cook until it is 60% to 70% cooked, add fresh soup, cooking wine, MSG and salt. After the soup boils, adjust the taste, skim off the foam, pour a little boiling soup into a large soup bowl, blanch the sea cucumber slices and then pour the soup back into the pot. After boiling, pour the soup in the pot into the soup bowl, sprinkle with pepper, a few drops of sesame oil, and coriander.

Sea cucumber tenderloin soup

Ingredients: soaked sea cucumber, pork tenderloin, egg skin, dried shrimp, coriander, salt, chicken essence, cooking wine, vinegar, soy sauce, sesame oil, water starch, chicken broth, egg white, and chopped green onion.

1. Slice the sea cucumber into large slices, blanch them in boiling water, remove them and cool them in cold water, soak the dried shrimps in warm water and wash them, wash the coriander and cut them into 5 cm long sections, and cut the egg skin into small oblique slices.

2. Cut the tenderloin into thin slices, put it in a bowl, add egg white, water starch, salt, soy sauce, cooking wine, chicken essence and sesame oil to coat it.

3. Put the chicken soup, sea cucumber and marinated pork tenderloin slices into a pot and blanch until cooked through. Pour into a large soup bowl.

4. Put the pot on fire and add chicken stock, dried shrimps, cooking wine, soy sauce, salt and chicken stock. After boiling, add sesame oil and vinegar into a large soup bowl with sea cucumbers. Sprinkle with egg skin shreds, green onion shreds and coriander segments and serve.

Sea Cucumber and Angelica Soup

Ingredients: 100 grams of dried sea cucumber, 30 grams of angelica, 100 grams of yellow lily, 100 grams of snow peas, 20 grams of lily, and 10 grams of shredded ginger.

1. Method of soaking sea cucumbers: first soak the sea cucumbers in hot water for 24 hours, remove the internal organs from the opening under the abdomen; replace with new water, boil on the fire for about 50 minutes, soak it in the original soup, and it can be used to make soup after 24 hours; boil hot water, put in the sea cucumbers, pick them up after 1 minute and set aside, this can effectively remove the fishy smell of the sea cucumbers.

2. Heat the oil in a new wok, stir-fry the shredded ginger, add the soaked cauliflower and snow peas, add enough water and angelica and bring to a boil.

3. Finally, add lily and sea cucumber and cook over high heat for 5 minutes.

4. Add salt and pepper to season, and the delicious sea cucumber and angelica soup is ready.
