How to make fat

When we were young, we often saw our parents making their own oil at home. Although people in today's society no longer make their own oil, we still miss the taste because after making the oil, there may be some leftover meat scraps that we like to eat. In fact, it is a very simple process to make oil from fat. We can make it at home and recall the taste of our childhood. So, how does fat become oily?

Lard is a layer of fat with an oil film growing on the pig's abdominal ribs, in which the pig kidneys are wrapped. The oil yield is high. The boiled oil has a unique oily aroma. The thicker and larger the lard, the better, while the thinner and smaller the lard, the inferior.

Pork fat is skinless fat with no oil film on the surface. Compared with lard, it has a lower oil yield because it is oil boiled from fat and has only meaty flavor. There is no unique oily aroma of suet.
