How to make classic tiramisu

For everyone, when they reach a certain age, they have to get married and have children, and then they will face frequent visits from relatives and friends. When relatives and friends come to visit, decent meals are essential. If you can't do it, wouldn't it be embarrassing? Well, now I will teach you how to make classic tiramisu.

1.1 Prepare espresso, add coffee powder and mix well.

2.2 To make the coffee cake body, separate the egg whites and egg yolks. I used about 5 eggs.

3.1 Add fine sugar to egg whites in batches and beat until almost dry foam.

4.250g of instant coffee powder is really a lot. Of course, it is not the kind of coffee powder that comes from Nestle, but a special instant black coffee.

5.1 Sift in flour and mix evenly.

6.2 Turn the food processor to low speed, add egg yolk to egg white, add coffee liquid after mixing, and mix until smooth.

7.12 Pour into a baking tray lined with baking paper.

8.21 Divide into two equal portions and bake in a 360F/180 degree oven for 10 minutes. Turn the baking tray around after 5 minutes to keep the baking heat even.

9.1 Cut the cake slices into the size you want.

10.2 Take out the baked cake and place it on a wire rack to cool. Then decorate it as you wish.

11.1 Add 2 tablespoons of ice water to the gelatin powder and soak it for later use.

12.2 Prepare the coffee liquor sugar solution. Simply mix it. Add fine sugar to the coffee and mix well. After cooling, add rum.

13. Whisk the egg yolks until they are slightly foamy.

14. Slowly add 50ml water and fine sugar

15. Boil the sugar water to about 115 degrees and beat it until it expands and turns white.

16.PS When I beat the egg yolks like this, there is always a lot of sugar splashing on the wall of the basin. Then I beat it for a long time, about 8 minutes, but it didn’t feel very puffy and white. Maybe it’s because not all the sugar was incorporated.

18. Use a hand whisk to stir until it is smooth.

19. Melt the gelatin powder in a simmering water and beat the cream until 80% done.

20. After mixing the egg yolk paste and mascarpone cheese, add the gelatin liquid and mix well, and finally add the fresh cream and mix well.

21. Finally, put a layer of cake in, brush with wine sugar solution, pour a layer of cheese cream paste,

22. Add another layer of cake, brush with wine and sugar solution, then pour in cheese cream paste, refrigerate overnight, and sprinkle with cocoa powder for decoration before eating.
