The effects of beef jerky include nourishing the spleen and stomach, replenishing qi and blood, strengthening muscles and bones, quenching thirst, eliminating edema, lower back pain, and physical weakness. Eating 50 to 100 grams of air-dried beef jerky every day can supplement the nutrients needed every day. The production method is to remove the fascia of the selected beef and slice it into long strips. Put salt, onion, ginger, sugar, etc. in a small bowl and mix them together to marinate the meat. After 12 hours, hang the meat on an iron rack in a ventilated place. Depending on the dryness of the air in different regions and seasons, it will take about ten days to air-dry normally, and the weight will be about 40% of that before air-drying. Hang the meat strips in the oven and bake over charcoal fire for about three hours.

From its production process, we can see that the air-dried beef contains very little water, has a high salt content, is roasted over charcoal, and is vacuum-packed. Therefore, under normal circumstances, there are no surviving adult parasites. However, insect eggs have a high ability to resist harsh environments, so there may be some remaining insect eggs. The insect eggs may not survive on the beef jerky, but the chances of survival are quite high after being eaten by humans. Special groups of people should be careful when eating air-dried beef, especially pregnant women should be especially careful about parasite-induced listerial disease, which can easily cause miscarriage.
