200g shallots 250g chili pepper (red, pointed, dry) 10g star anise 5g cinnamon

25g chili oil

step:

1. Remove the main bone from the lamb leg and blanch it in cold water to remove all the blood.

2. Put the lamb legs into the soup pot, add water, onion, whole dried pepper (200 grams), ginger, shallot, Erguotou, star anise, cinnamon, salt, and MSG, boil over high heat and skim off the foam

3. Cook over low heat until 80% cooked, remove from the heat and cut into 5 cm long and 0.5 cm thick strips for later use

4. Remove the stems of the red pepper and cut it into rings

5. Remove the stems of garlic

6. Cut the green onion into oblique slices and cut the remaining 50 grams of whole dried pepper into sections

7. Place a clean pot on high heat, add vegetable oil, heat until 60% hot, fry the mutton briefly, pour into a colander to drain the oil

8. Leave some oil in the pan, add garlic, chili rings, dried chili segments, and fermented black beans and stir-fry briefly.

9. Add mutton, add cooking wine and stir-fry until fragrant, add MSG, soy sauce, chili sauce and oyster sauce and stir-fry evenly

10. Pour in the fresh soup and simmer for a while, add red oil, put it into a pan with green onions as the base, and serve it on the stove.
