1.1 Add 10 grams of sugar to orange juice and beat until saccharified. Add salad oil and beat vigorously until dissolved and becomes thick and transparent.

2.2 Separate the egg white and yolk, and put the egg white in a clean, oil-free and water-free container.

3.1 Add a few drops of lemon juice to the egg whites, beat until coarse foam, add 10 sugar and a little salt.

4.2 Sift in low flour and mix evenly without making circles. Add egg yolk and orange peel paste and mix well.

5. Continue beating until the egg whites form fine bubbles, then add 10 grams of sugar. Beat until wet foam forms, and when you lift the whisk, a large curved groove appears. Add the remaining 20 grams of sugar. Beat until hard foam forms, and there will be obvious resistance, and a small short tip will appear on the whisk head.

6. Take one-third of the egg whites and mix them with the egg yolk paste. Then take another one-third of the egg whites and mix them.

7. Finally, pour the batter into the remaining egg whites and mix well. (Do not make circles. Insert the rubber spatula from the edge of the mold to the bottom, scoop from the middle and stir, while turning the bowl counterclockwise with your left hand).

8. Pour into the mold, gently drop the mold to shake off the large bubbles, and bake at 170 degrees, middle layer, for 30 minutes.

9. After taking out of the oven, gently drop the mold, immediately turn it upside down, let it cool and remove it from the mold.
