How to make chiffon egg rolls

1. Prepare the necessary materials, beat the egg yolk with 20g of fine sugar, add corn oil, milk, low flour and baking powder in turn, sift into the egg yolk liquid, stir evenly with a rubber spatula to form an egg yolk batter.

2. Beat the egg whites until coarse bubbles form, then add the first batch of granulated sugar. Continue beating until fine bubbles form, then add the second batch of granulated sugar. When the surface has a slight texture, then add the remaining granulated sugar (preheat the oven to 180 degrees).

3. Continue beating until the egg whites are in a dry foam state. After lifting the whisk, the egg whites will be pulled into round pointed corners.

4. Mix one-third of egg whites with the egg yolk paste, and stir evenly.

5. Pour the mixed egg yolk paste into the remaining egg whites and stir evenly.

6. Pour the batter into a baking pan lined with paper, smooth it out, and shake it vigorously a few times to let the large bubbles inside the batter escape.

7. Place the baking tray in a preheated oven at 180 degrees and bake for 20 minutes until the surface is golden brown. Take it out and turn it upside down on the grill, and tear off the paper while it is still hot.

8. After the cake has cooled slightly, turn it over so that the surface is facing up again, place it on a clean piece of wax paper, and use a knife to cut a hole in the rolling position, but do not cut it through. Take a rolling pin and wrap it around the wax paper. Roll the rolling pin backwards while pushing the cake roll forward. Roll it all the way to the end, and when the cake roll is formed, wrap the rolled cake roll with wax paper and tighten the two ends.

9. Put it in the refrigerator for half an hour to set before cutting.
