How to make braised cabbage with egg crisps

1. Soak the dried mushrooms and dried black fungus in cold water one night in advance. Do not use too much water to soak the mushrooms. (Do not pour out the mushroom water, as it will be used when cooking the cabbage.)

2. Cut carrots and mushrooms into strips, separate the cabbage into leaves and stems, and cut each into small pieces. Tear the fungus into small pieces and slice the ginger.

3. Beat the eggs in a bowl and add 1/4 teaspoon of salt

4. Heat the wok, add 3 tablespoons of vegetable oil, and when the oil is 80% hot, pour the egg liquid into the oil with a slotted spoon.

5. Use chopsticks to quickly loosen the eggs so that they don’t clump together.

6. Fry over medium heat, stirring as you go, until the eggs turn brown and yellow. This is the egg crisp. Serve the egg crisps for later use

7. Add a little more oil to the wok, and when it is 30% hot, add mushrooms and ginger slices and fry until fragrant

8. Add carrots and dried cabbage

9. After frying until soft, add 3/4 of the egg crisps (leave 1/4 of the egg crisps for final decoration)

10. Finally, add the cabbage leaves and 1 bowl of mushroom soaking water, and add 1 teaspoon of salt to taste

11. After the fire is dry, turn to low heat

12. Cover and simmer until the cabbage is soft

13. Add mushroom essence (or chicken essence, MSG) to season
