How to make braised pork with dried bamboo shoots

1. Soak the dried bamboo shoots 1 day in advance

5. When the sugar melts and bubbles and turns amber, quickly pour in boiling water, stir well, turn off the heat and pour into a small bowl for later use

6. Cut the pork belly into 3cm square pieces, cut the green onion into sections, slice the ginger, and cut the bamboo shoots into triangular pieces

7. Put the pork belly in hot water and blanch it until the water boils. When the surface of the meat changes color, remove it and drain it.

8. Put a little oil in the pot, heat it over low heat, add the pork belly, onion, ginger, garlic and star anise, and stir-fry until the edges of the fat turn slightly yellow.

9. Add rice wine along the edge of the pot

10. After frying, pour in boiling water to completely cover the meat

11. Add dried bamboo shoots, soy sauce, oyster sauce, 2 grams of salt, sugar, and sugar color to taste, cover the pot and simmer over low heat

12. After stewing for 1 hour, add the remaining 2-3g of salt and continue stewing for about 40 minutes to 1 hour. Turn off the heat when the soup is thick.
