Steps to make braised chicken wings

1 Make three diagonal cuts on each chicken wing to make it easier to absorb the flavor. Blanch, remove from water, drain and set aside.

2 Fry the chicken wings in oil until both sides are slightly golden.

3 Pour out all the oil, put a little oil in the pot, add onion, ginger and star anise, stir-fry over low heat until fragrant.

4 Pour light soy sauce and dark soy sauce in a ratio of 1:1 and pour it along the edge of the pot to remove the soy sauce smell. Add rice wine and rock sugar.

5 After boiling over high heat, add the chicken wings. The soup should be level with the chicken wings. If it is not enough, add rice wine.

6 Cook over high heat throughout the process, turning the chicken wings occasionally. Until the soup is thick. Add some MSG to enhance the flavor and serve.

Tips

1. Tips for frying chicken wings without sticking: Heat oil in a pan, pour out the oil, add cold oil again, put the chicken wings in when it is about 30% to 40% hot, shake the pan when the edges turn slightly yellow, turn them over with chopsticks, and fry until the cold surface turns slightly yellow).

2. The braised sauce must be boiled over high heat so that it tastes better. Only use rice wine, don't use water. Taste it and add a little salt, the taste should be lighter than your own. It’s just right after the juice is collected.

3. This braising method is suitable for fish, chicken, seafood, and tofu, but not for pork, which is more meaty. Beef and mutton are also not suitable.

4. Because rice wine is used, it is refreshing and delicious, with a light aroma of wine. If you don’t have rice wine, you can use beer instead, followed by yellow wine and cooking wine.
