In Sichuan, people prefer stir-fried squid because stir-frying is a particularly famous way of cooking dishes in Sichuan. What about adding cumin to stir-fried squid?

Spicy Cumin Squid

1. Wash the fresh squid, especially the small squid claws, and wash them out one by one. Although it is troublesome, it is the cleanest way.

2. Cut the squid into slices of appropriate size, blanch them in hot water, and take them out immediately so that there won’t be too much water when you fry them.

3. Pour a proper amount of oil into the pot, a little more is fine, add the peppercorns and fry, then remove the peppercorns, add the scallions and ginger, add the squid and fry, add a little white vinegar and cooking wine, then add the cumin and continue frying, finally add the garlic chili sauce, do not fry for too long after adding the chili sauce, otherwise it will easily taste bitter, then you can remove from the pot.

Spicy Fried Squid

Ingredients: squid Accessories: vinegar, soy sauce, wet starch, peanut oil, green onion, dry red pepper, cooking wine, chicken soup, sesame oil, refined salt

Preparation method:

1. Take the squid pieces, remove the membrane, clean them, and cut them into 6 cm long pieces.

2 cm wide silk, soak in clean water;

2. Heat the wok over high heat, add 25 grams of peanut oil, heat it up, add cooking wine, salt and chicken broth, bring to a boil, pour in the squid shreds, cook for a while, remove and set aside;

3. Clean the dried red pepper, remove the stems and seeds, and cut into thin strips. Peel, wash and chop the green onions;

4. Heat a clean pot, add the remaining 75 grams of peanut oil, heat it to 50% hot, add dried red pepper shreds, soy sauce, salt, and vinegar and stir-fry for a few times, pour in the remaining chicken soup and squid, bring to a boil, add wet starch, thicken, add chopped green onions, drizzle with sesame oil, and serve.

Ginger Squid

Ingredients: 1 pound of fresh squid or dried squid that has been foamed, 3 tablespoons of soy sauce, 1/2 tablespoon of vinegar and sugar each, 1 tablespoon of sesame oil, 1 teaspoon of ginger, garlic, and chili powder each, bean paste, cooking wine, starch sauce, sugar, salt, MSG, etc.

1. Clean the squid and wipe dry;

2. Cut cross lines inside the squid and cut into pieces;

3. Mix all ingredients to make sauce;

4. Bring the water to a boil, add the chopped squid and blanch for about one minute until it curls up, then remove;
