How to make rice with vegetables

Paella

Introduction: This paella is so delicious! It's a great one pot meal. You can prep all the ingredients ahead of time and dinner will only take 15 minutes.

Key Ingredients:

2 teaspoons olive oil

500g chicken breast, cut into 2cm cubes

1 onion, chopped

250g sausage, chopped

2 garlic cloves, crushed

1 cup basmati rice

2 teaspoons turmeric powder

425g diced tomatoes

1 red pepper, chopped

Red chilli, seeded and chopped (optional)

2 cups (500mL) chicken broth (gluten-free)

250g cooked shrimp, peeled

¼ cup cilantro

Lemon wedges, to serve

Preparation method:

Heat one teaspoon of oil in a large, deep skillet over medium heat. Working in two batches, fry the chicken for 2-3 minutes per side, until golden brown and cooked through. Remove from skillet and drain on paper towels.

2. Add onion and chorizo ​​and cook, stirring occasionally, for 1-2 minutes, until chorizo ​​begins to crisp up. Add the garlic and cook for another minute. Add rice and turmeric and stir for 2 minutes. Add stock, tomatoes, peppers and chili, if using.

3. Bring to a boil, then reduce heat and simmer for about 15 minutes. Make sure to stir it every 5 minutes or so to prevent the rice from sticking. When most of the liquid has been absorbed, add the chicken and prawns, stirring and cooking until heated through. Serve immediately, garnished with cilantro and lemon wedges.

2. The sausage and peppers make this dish moderately spicy (but oh so delicious), so omit those if your family doesn't tolerate spicy food. Or, feed the kids something bland earlier in the evening that’s specially prepared for the adults (like we did).
