1. Before preparing the filling, prepare seasonings such as green onion, ginger, thirteen spices, cooking wine, light soy sauce, sesame oil, salt, chicken essence, etc.

2. Wash the mutton and chop it into fine minced meat. Wash the leek (or other vegetables) and chop it into fine pieces. Soak the Sichuan peppercorns in water to make Sichuan pepper water.

3. Put the minced meat into a bowl, add minced ginger, chopped green onion, salt, pepper, cooking wine, soy sauce, pepper water, and egg liquid and mix well. Then add sesame oil and peanut oil and mix well. Finally, add chopped leek and mix well.

It should be noted that mutton has a strong smell, so you need to add pepper water and a large amount of minced ginger. And the mutton you choose should not be too lean. In addition to leeks, you can also choose fennel, winter melon and other vegetables as fillings with lamb.

1. Add eggs, salt, cooking wine, soy sauce, sesame oil, minced ginger, chopped green onion and pepper to the minced mutton and mix well.

2. Add chopped pickled cabbage, chopped carrots and chopped mushrooms and mix well to make the stuffing. (Soak the dried mushrooms in advance, grate the carrots, sprinkle a little salt, squeeze out the excess water and mix into the stuffing)

3. Pour boiling water into the flour and stir quickly with chopsticks, then add cold water and mix well. Knead into a smooth dough with your hands and cover with wet cloth for 20 minutes;

4. Take out the sugared dough and knead it until smooth, then cut it into 8 equal parts;

5. Roll each small piece into a round slice and wrap it with fillings;

6.Pinch and flatten into a pancake shape;

7. Put 2 tablespoons of oil in a frying pan, add the pies, cover the pan and fry over low heat for 10 minutes, turning over halfway through, until both sides are colored and cooked through;
