How to make meatballs more tender

How to make meatballs more tender

Ingredients: 200 grams of lean pork, a handful of dry starch, an egg white, appropriate amounts of green onion and ginger, a little pepper, two small tablespoons of soy sauce, a little salt, and a little MSG

1: Use a blender or a knife to chop the meat into small pieces. The finer the better. It is best if the meat is half fat and half lean.

Add dry starch and egg white and beat in one direction, then add chopped green onion, ginger and a little pepper, cover with a lid and marinate for ten minutes.

2. Add salt, MSG, and soy sauce to the marinated minced meat for seasoning (the salt should not be added too early, because if it is added too early, the moisture in the meat will be removed and the meat will not be smooth and tender)

3: Then prepare some side dishes you like, anything is fine. I use carrots and spinach, which are popular in spring. Winter melon is the most classic material for making meatballs, but you can also use cucumber, cabbage, etc.

4. After the side dishes are prepared, boil a pot of water according to the amount of meatballs you want to make. Put a large piece of ginger and a few slices of green onion in the water. After the water boils, add the side dishes and cook them until they are 80% cooked.

5: After the side dishes are cooked to 80% done, start making meatballs. Wash your hands thoroughly, shake off the moisture, pinch a handful of minced meat, use your thumb and index finger to squeeze out a small ball, and then hang it in the pot with a spoon (be sure to turn on the lowest heat at this time).

6. After scraping everything, bring to a boil over high heat, then turn to medium heat and cook for 5 minutes. The meatballs are cooked. Add a little salt, MSG, and pepper to adjust the hot taste, and add a few drops of sesame oil. Cook some rice in the rice cooker. In this way, a simple, nutritious and delicious meal with meat, vegetables, rice and soup is ready.

Precautions

Use low heat when putting the meatballs in, otherwise the front ones will be cooked while the back ones will still be cooked. When everything is done, bring to a boil over high heat and then cook over medium heat for a few minutes.
